The Bay Gardens Beach Resort and Spa has formally challenged the two famous ‘roti ladies’ of Reduit Beach, Liz and Shirley to cooking competition.
The 1st Annual Roti Throwndown will be held on Wednesday, Dec 17th, 2014 on the beach patio at the Bay Gardens Beach Resort and Spa at 11 am.
Our very own Chef Peter Lawrence, who recently won the award for ‘Best Seafood Dish’ at The Taste of the Caribbean, will take on the challenge.
Three stations will be set up on our beach patio, where they will showcase how they prepare a chicken and seafood roti. The best average score by the judges will be the winner and officially can hold the title of “Best Roti on Reduit Beach”.
PARTICIPANTS
Peter Lawrence, is an Executive Sous Chef who has worked for the Bay Gardens Beach Resort and Spa for 2 years. He recently participated in the Tate of the Caribbean Cook-off along with his fellow Saint Lucians winning the overall silver medal. He individually claimed the Gold medal for best seafood dish overall. Since winning this prestigious award, he has participated in several local cooking competitions, which he has topped along with his team. He also volunteers for the Saint Lucia Hotel and Tourism Association’s Chefs in Schools Program.
Shirley started the roti business about 5 years and recently started selling on Reduit Beach only 3 years ago. Her recipe was passed down by her mother who developed a passion in her to make great tasting rotis. Originally from Rosehall town, Guyana, Shirley loves meeting new people and introducing them to the tastes of an authentic Caribbean Roti. She offers a Beef, Chicken, Veg and occasionally Seafood Roti at very reasonable prices. There has been much positive remarks noted on our Trip Advisor page about Shirley’s Rotis.
Elizabeth, or as most people call her, Liz, has been making roti’s for 11 years now. She started selling at Reduit Beach 3 years ago and
has become an instant hit. Liz Roti’s offer a variety of different choices, including chicken, beef and seafood. Cooking has been her passion since she was a child and she also got her recipe from her mother. Liz grew up in Georgetown, Guyana and loves meeting new people. THE JUDGES
Chef Adil Sherwani: Is the owner and head chef of the popular restaurant, Spice of India, in Rodney Bay Village. He has always been a chef with a difference in the sense of stressing the importance of communication in the industry. He has a passion for combining the freshest of ingredients, with a creative flair for presentation.
Mr. Ronald Ramjattan: Founded Baron Foods in 1991, with the vision of becoming the global leader, who can make customers satisfied with innovative products. His focus is mainly to offer Caribbean-Style food products of the highest quality whilst at all times, understanding the customers’ needs and demands.
Mr Azeez Noorani: Is the executive Vice President of the Saint Lucia Hotel and Tourism Association and has strong knowledge and expertise of culinary presentations. Over the years he has demonstrated the ability create private and public sector partnerships helping Saint Lucia thrive in the tourism industry.
Special Guest: We will have a frequent guest of the Bay Gardens Beach Resort who has tried all three of the participants’ rotis before.
PEOPLE’S CHOICE AWARD
There will be a People’s Choice award available for all the participants to win. A set number of Roti’s will be available to all invited guests and media and there will be a voting card in which they will determine which roti is best. The roti’s will be marked anonymously with letters, A, B and C. The winner will be the People’s Choice for Best Roti on Reduit Beach.

Taste and Flavour: 40 Points
Presentation: 15 Points
Shell: 20 Points
Filling: 25 Points
Total: 100 Points
Participants will prepare two rotis each, one chicken and one seafood. Each roti will be split into 4 for each judge. The total score will be out of 200 (100 for each roti) and the highest average score will be the winner.
